Title: Seascape Pumpkin Bread

Yield: 1 Loaf

3 1/2cAll-purpose flour
2tsSoda
1tsSalt
1/2tsBaking powder
3cSugar
1tsCinnamon
1tsPumpkin pie spice
1cCooking oil
4 Eggs
1 16-oz can pumpkin
1/2cChopped walnuts
1/4cWater

In a large mixing bowl combine the flour, soda, salt, baking powder, sugar, cinnamon, and pumpkin pie spice. In a seperate bowl, mix by hand the oil, eggs, pumpkin, walnuts, and water. Combine with the dry ingredients. Bake in a loaf pan in a 350 oven for 1 hour.

The Chef's Comments: "This recipe is in the oven as we speak, so i can't tell you what it tastes like. What I *can* tell you though is that there must have been a typo in the book as far as number of servings, because, I had *way* more batter than is necessary for 1 loaf. I have 12 muffins cooking, too, out of the same batch!" - Lisa
